The word comes from those Japanese capsule toy vending machines that are called Gachapon. It’s an onomatopoeia for the sounds the machine make. Gacha is the sound when you turn the big dial on the machine and Pon is the sound when the capsule lands in the tray.
Basically in games anything that has a similar blind box collectible mechanic as these machines is called a Gacha. It’s also why you often see Gachas visualized as capsules coming out of virtual vending machines.
